What are Holstein cows?
The Holstein -- also known as 'Holsteiner-Friesian' and historically known as 'Holland Cow' -- is an old breed of dairy cow famous for its black-and-white tobiano-like coat.
Holstein cows originated in the Netherland around 2,000 years ago, back when the Netherlands was inhabited by Celtic and Germanic tribes. These cows survived all of the turmoils that swept through the Netherlands, to become the most common and productive breed for milk production in both Europe and the USA.
More than just a black-and-white cow:
While most Holstein cows have indeed a black-and-white coat, some are red-and-white, where the chestnut parts can be sooty. In addition, these clever cows can be trained to perform tricks and do tasks, such as going to the milking stations or offering their legs to be checked by vets.
What are Cow-pony Holsteins?
Unlike the Holstein cow which is a very real breed, the Cow-pony Holstein is a fictional breed found only in Horse Isle. It was designed to answer the hypothetical question of: if crossing cows with horses was possible, what would a pony x Holstein cow cross look like?
Obviously, the overall genetic stats of ordered Cow-pony Holsteins are lower than in regular horses, but, because it's still a pony, with proper breeding these stats can be brought up to the normal maximum seen in other horse breeds.
Conformation:
The conformation of the Cow-pony Holstein integrates characteristics seen in Holstein cows (not bulls) with the overall conformation of a pony.
The head is very broad and so is the muzzle. The ears are wide and angled to the sides of the head. The neck is short and either lacks a crest or has a minimal one. The wither and back are both as flat as a pony can have, with the back being appropriately long. The croup is also flat at the top, and curves to form angular hindquarters.
While cow-ponies don't have dewlaps like cows do, they do have large and bulgy chests. The legs are short and sturdy, and the body is broad.
As for hair, Cow-pony Holsteins can have a short mane or lack is altogether. Their tails are relatively thin but grow long, and their legs are clear from feathering.

Coats & Height:
Always black-and-white tobiano or red-and-white tobiano (red means chestnut). Some can also be sooty. The splashed-white gene also exists but is always accompanied by tobiano to increase the variety of pinto patterns.
